Ingredients: - Frozen raw oysters (~500g / 1 lb) - 2-3 tbsp corn starch (or flour) , for cleaning - 4-5 cloves garlic, thinly sliced - Small piece ginger, shredded - 1 red chili pepper (optional), sliced - 4-5 stalks scallions/green onions, cut into sections - ½ tbsp light soy sauce - Pinch of white pepper - 1 tsp corn starch (for sauce) - 1 tbsp Guangdong rice wine (or cooking wine) - 2-3 tbsp cooking oil Steps: 1. Clean the oysters , Put oysters in a bowl, add corn starch, gently mix with clean hands for 1 minute. Rinse well, drain. (⚠ Do NOT remove the dark gut: it's fine to eat.) 2. Steam the oysters , Place in a dish. Once water is boiling, steam on HIGH heat for 4 minutes. Save the steaming liquid in a small bowl (very nutritious!). 3. Prepare the sauce , Mix ½ tbsp soy sauce + pinch white pepper + 1 tsp corn starch with the reserved oyster juice. Stir until dissolved. 4. Stir-fry aromatics , Heat oil in wok. Fry garlic slices on medium heat until golden brown. Add ginger + white parts of scallions, stir until fragrant. 5. Add oysters , Turn to HIGH heat. Add steamed oysters, stir-fry quickly for 30 seconds to dry off moisture. 6. Wine & sauce , Splash 1 tbsp rice wine around wok edge. Pour in the sauce. Add green scallion parts + chili. Stir-fry on high heat until sauce thickens (~20-30 seconds). 7. Serve , Best with steamed rice! 🍚 Tips: - Oysters are already cooked after steaming , don't overcook in the wok or they'll become tough - The steaming liquid is the secret to the rich flavoron't throw it away! - High heat throughout stir-frying for best flavor
